For a weekend/week I always love Barcelona - it’s a beautiful city with loads to do, you get the best of both worlds with the city and the beach. There are some really amazing airbnbs/hotels depending on how many people you’re going with. Last time I was there I stayed at the H10 Madison which has a rooftop bar and pool but there are lots of options if you’re looking for somewhere slightly cheaper.
If you can, I’d try to book the Sunday brunch at Cecconis near the Marina - it’s attached to Soho House so the interior design is beautiful. The brunch is a buffet which I was sceptical about before I went, but it’s SO good - oysters, lobster, loads of cheeses, amazing salads, as well as mille-feuille/chocolate tarts/fresh fruit etc.
The Gothic Quarter is great for boutique shops, and the street Passeig de Gracia has every brand from high street to designer. If you want some culture, definitely visit the Sagrada Familia, the interior is unbelievable!

I agree with Barcelona for a weekend city break - I celebrated my 21st in Barcelona too and it was great!
If you’re set on Europe, you can look into interrailing for 2 weeks, which can be catered to depending on your budget. You can get inspiration for routes here: https://www.interrail.eu/en/plan-your-trip/trip-ideas
Further afield, the Caribbean is beautiful. I love Barbados, but there are various islands you can look into. Its a bit pricey especially at the end of August, but so worth it!

I’m not sure what your budget is or how far you’re interested in going but if you’ve never been to New York it would definitely be a very memorable trip. It’s my favourite city - there’s so much to do and see, i’ll never get bored of visiting!
As for closer city breaks - another vote for Barcelona here or Copenhagen and Amsterdam are a lot of fun!

ooo yes Amsterdam is also a great shout, summers there are lovely! Late night canal boat tours are fab! If you’re a meat eater, Bonnies does an amazing steak and their bar is adorable Bonnie (@bonnie.amsterdam) • Instagram photos and videos

For a once-in-a-lifetime trip I would really recommend central / south America when it’s slightly quieter. Mexico would be my top choice, or Guatemala and Belize!
