My go-to is Nigella’s semifredo which is SO easy to make but look impressive!

It’s not a recipe, but anything with meringue because it’s easy, not expensive and always looks impressive. If you cook a really large meringue base which is always easier than it seems and you can just leave it in a super low oven for ages, then cover with either cream or greek yoghurt and decorate with whatever you like - berries, mint leaves, passion fruit, etc. xx
