This will be such a fun trip!
You probably already have these on your list but Victoria Peak and The Big Buddah are definitely worth visiting
A slightly random one - go to the InterContinental Grand Stanford Hotel one morning for breakfast with an amazing view of the skyline!
Second The Peak & Big Buddha.
Take a star ferry across the water for great views in either direction.
There’s a free light show on the harbour every night which is worth a watch.
Restaurants wise, reccommend Ho Lee Fok and Yard Bird (will probably need to book quite far in advance as both popular).
Lastly theres a gorgeous hike you can do from Dragons Back to Big Wave Bay with incredible views. Path is easy to follow. There are some steeper bits so best to set off early but it finishes on the beach so worth it for a coconut or a beer at the end
