Ultimate risotto recipe

I really fancy making a risotto this weekend but unsure where to start! I feel I always rush mine and they’re a bit rubbish. Does anyone have a failsafe recipe they use? x

I love this one from the NYT: Spinach Risotto With Taleggio. It’s based on the nettle risotto from the River Café in London.

Have you ever tried a leave in the oven one? So good to have the yumminess without the stirring!
