Hosting a Christmas Get-together

Hi! I’m hosting a Christmas/festive dinner for 6 people next week. My dilemmas are that one is a vegetarian and I am hosting on a week night, so it needs to be quite easy but I would also like to make something special! Would love to hear some ideas, thank you!!

When it needs to be a bit quicker I lvoe to make a mushroom wellington - you can get the puff pastry ready and then just need to prep the filling for the mushrooms. And it looks so good when baked. I’ve made this one before and it was lovely: https://ohmyveggies.com/mushroom-wellington/

My tip is to put some pastry aside and cut out little leaves to decorate the wellington. Serve with roast potatoes, veg and gravy - or whatever you feel ike :slight_smile:

Could you keep it simple with a homemade pie served with some lovely gravy, seasonal veg and roasted potatoes? You could make a mini veggie bake for your vegetarian friend?

Otherwise a whole-baked salmon with some lovely sides could also go down well and looks a bit more impressive?

I feel like sides are always the best part of the meal anyway! Can’t go wrong with lots of roast potatoes, carrots, parsnips, brussel sprouts etc.

I normally make a vegetable wellington (using ready roll pastry) as you can do all of the prep in advance, chill in the fridge overnight and just pop in the oven when people arrive

It’s really easy to make but gives the impression that you’ve put a lot of effort into the meal

I love a Mushroom vol-au-vents!

Could also get some Quorn mince and make a yummy pie!
