I am hosting either lunch or supper for about 30 people this Autumn . I’m a pretty decent cook but would welcome ideas/recipes which work for that number . Thank you !
Hosting for 30 people is definitely a big task, but it can be a lot of fun, especially in Autumn! If you’re thinking lunch, something like a big pot of butternut squash soup could be perfect it’s easy to make in advance and serves well with some crusty bread. You could also do a couple of roasted chickens with herb stuffing and roasted root veggies. Quiches are great too; you can make a few different varieties like spinach and feta or mushroom and gruyere, and they’re easy to slice and serve.
My favourite thing to make for a large number is a Red Lentil Dhal, it’s very affordable ingredients and easily made for big groups. I would serve with rice, naans and some yoghurt and other smaller toppings for people to help themselves at the table.
Have a look at some of Alexandra Dudley’s suggestions on the SL site. Each month she shows how to entertain. I’m sure the recipes can be easily increased for a larger group. x
I love making Jamie Oliver’s Chilli Con Carne when i’m entertaining. Easy to make and doesn’t need too much attention. Then add some guac, nachos, dips etc. Fun for everyone to dig in and people could also bring some dips if you wash to ‘dish’ out the responsibilities.
Our office have a tradition that every Thursday someone cooks for the whole office of 100 people! My go to is a Cuban black bean stew. It’s easy to make and suitable for vegans etc. I then spend most of my budget on sides and toppings - guacamole, cheese, sour cream, herbs, lime, different chillis etc so everyone can customise to taste.
My tip for making it very tasty is to use the Gran Luchito chipotle chilli paste.
