I am trying to incorporate more protein into my meals and am struggling with vegetarian breakfast options. I currently have a lot of Greek yogurt and nut butters but would love some other ideas please x
I love a banana pancake if you’re up for using protein powder, otherwise I love eggs&spinach (you could make a tray bake and then have it throughout the week Spinach Egg Bake - Healthy Seasonal Recipes)
I have started to be creative with my eggs with lots of veggies and nutritional yeast.
I also love baked oats, there are so many recipes online!
My fav breakfast are the overnight oats from The good grain! you can order online or they are stocked in Plant organic, Selfridges, Whole foods etc
I’m super lazy at breakfast but I’m also a veggie who is trying to up her protein.
You can get some really high protein granolas which are great and you can mix with greek yoghurt or skyr for extra protein.
Equally I like to make smoothies with protein powder and nut butter.
If I have time the night before I also like to make veggie pots to take in, which I reheat in the morning which are 2 veggie sausages, some scrambled egg, mushrooms and baked beans.
Just means I am able to get in over 20g of protein without the sugar that sometimes comes with sweet breakfast options!

You can make some really good cottage cheese pancakes - it’s all blended up in the batter so you don’t taste it but is full of protein! You can also make them in advance & then pop them in the toaster to reheat
Tofu scramble? Also having beans in the morning is great as they are super high in fibre & protein.
You can make a protein wrap by blending eggs & spinach and then frying like a pancake, which you can then just fill with other yummy fillings if you get bored of just eggs. I’ve also seen a recipe on TikTok for chinese steamed eggs with soy sauce, spring onions etc. which looks sooo good
Chia pudding with silken tofu blended in for extra protein
You could also start adding protein powder into your oats or yoghurt if you’re into that.
Speaking of cottage cheese, I have seen the viral cottage cheese bagels they are so easy to make! all you need is cottage cheese and flour. Would be so good to have egg and veggies inside?

I make homemade egg bites at home which are so yum - you can make the red pepper, cheese & egg ones at home so easily - three of those is a nice amount of protein and you can batch make them. You can also add in cottage cheese for added protein - just mix all the ingredients together - pop in little cupcake molds or a tray and then bake or cook in the airfryer until they’re firm

Omelettes!! Full of protein alone, and then the ingredients can be endless.
I have started making more omelettes actually! I put mushrooms and cottage cheese in them and have finally started to actually feel full till lunchtime!
